Protein-Packed Pumpkin Pancakes

You guys. Be forewarned. I am about to channel my most basic bitch with this post. I mean, like soooo basic.

Today happens to be the first day of Fall!!! I literally sprung out of bed, ran downstairs and made breakfast. Am I the only one who wakes up STARVING?!

Before I share my morning creation with y’all, I wanted to give you my favorite baking hack.

Have you gone to the local grocery store looking for a healthy and/or gluten-free flour only to realize how effing expensive they are?! I went to Albertsons in search of Almond Flour earlier this week and the only bag they sell is almost $20. TWENTY DOLLARS. What the actual eff??

Then a lightbulb went off.

One of my pantry staples year round is old-fashioned oats. I get the massive life size box from Costco and for under $10, it’s such a steal. I use it in sweet and savory dishes, for oatmeal, and for baking. *If you happen to have any gluten sensitivity or allergy, be sure to buy the gluten-free version.

Simply take the oats, blend ’em up and BOOM! You have gluten-free flour. Easy and super affordable!

So, back to breakfast. It’s officially Fall AND the weekend happens to be right around the corner. That means all things pumpkin! These protein-packed pumpkin pancakes sport tons of protein, and the aroma of cloves, nutmeg and cinnamon. Enjoy!

Easy Protein-Packed Pumpkin Pancakes

Firstly, blend the following in a magic bullet or any blender you have at home:

¼ cup oat flour

1 heaping tablespoon PEScience Chocolate Peanut Butter Cup

¼ cup pumpkin puree

½ banana

1/3 cup liquid egg whites

Blend!

Then, fold in:

1 tablespoon pumpkin pie spice (from Trader Joes – my fall staple! It’s a blend of cinnamon, ginger, citrus, nutmeg, cloves and just a hint of cardamom)

1/8 teaspoon baking powder

From here, you can freeze the batter and save for a later date… or spray a non-stick pan with coconut oil and cook these babies up!

I topped mine with 4 chopped up raw walnuts and 1 teaspoon Walden Farm’s Syrup but honestly, a tablespoon of your favorite nut butter and sliced bananas sounds amazing, too!
