The LAST Pancake Recipe You’ll Ever Need.

I’m well aware I’m making a bold claim here. And you know what? I’m sticking to my guns on this one. Not only does this recipe technically only require three – yes, three – ingredients, but it’s delicious and packed with protein, healthy fats and carbs (please stop fearing carbs, people) to keep you satiated till lunch.

You can’t read a health-centric blog these days without reading an article on trendy breakfasts. “Start the day off with a shot of apple cider vinegar!” “Whip up a filling smoothie” and the infamous “Easy and delicious overnight oats!”

Now I love most of those things (sorry, still can’t get on the vinegar chugging train…), but let’s be real. Sometimes we all just need some comfort food. Stress from work, that time of the month of us ladies, whatever the reason – sometimes we all just need some good ‘ol fashioned comfort food.

And that is precisely where these warm, dense and chewy pancakes come into play.

As someone who works a demanding job from home, I rarely get time to prepare a proper breakfast. Couple that with living on the west coast and waking early to work east coast hours, I’m lucky if I have 10 minutes to make – and eat – breakfast. That’s one of the reasons why I love this pancake recipe. It’s quick and easy. Beyond convenience, it’s downright damn delicious. Enough of the talking, let’s get to cooking!

Easy, Protein-Packed Pancakes

1/3 cup Kodiak Pancake Mix

1/3 liquid egg whites

1/3 water

Mix in a bowl to combine. Spray a nonstick pan and cook over low flame until edges are lightly browned.

That’s it! Seriously, that’s it.

However, if you’re an overachiever like me when it comes to pimping out your pancakes, I make a few minor modifications based on what I’m feeling that day.

Today I added into the mix (before cooking):

¼ cup frozen blueberries

½ tablespoon chia seeds

I then cooked the pancakes and topped with a heaping tablespoon of Walden Farms Pancake Syrup and 1 tablespoon of freshly ground almond butter.


For my version, it made three pancakes coming in at:

What I also love about this recipe is that the possibilities are endless. Swap blueberries for banana. Add flax instead of chia seeds. Microwave berries in a splash of water and make your own sugar free jam. Whatever blows your hair back.

I personally buy my Kodiak Cakes from Costco, but you can get it at most local grocery stores, Target, and others. They come in a variety of flavors but I kick it old school and stick to Buttermilk.
